After harvesting, the pods undergo a lengthy preparation process—blanching, sweating, drying and conditioning—which develops their characteristic aromas.

Each botanical species has distinct molecular characteristics, resulting in specific aromatic profiles.

Planifolia vanilla (Madagascar, Uganda, Comoros, São Tomé, Mexico, etc.) is distinguished by rich, intense, chocolatey and spicy notes.

Tahitensis vanilla (from Tahiti or Papua New Guinea) develops a more floral, gentle and slightly aniseed profile.

Pompona vanilla develops predominantly almond-like notes.

Within a single botanical species, geographical origin—the country of harvest—strongly influences the aromatic profile of vanilla pods. This variability is notably explained by terroir, particularly soil quality and growing conditions.

Each origin therefore offers a unique taste experience suited to a variety of culinary applications.

Contrary to popular belief, a quality pod is not necessarily supple and fleshy.

The quality of a vanilla pod depends on its intended use. To assess quality, check for a high vanillin content—between 1.6 and 2%* for Gourmet vanilla—and a moisture content not exceeding 38%.

For information, any professional selling vanilla must be able to provide analytical reports upon request. These reports notably state the vanillin and moisture content of the vanilla pods.

The pod should have a powerful, pleasant aroma, with no unpleasant odour that could indicate insufficient drying.

The vanilla pod is the raw product, offering the purest flavour.

Vanilla extract is obtained by macerating pods in an alcoholic mixture. This extract, also known as oleoresin, is then generally diluted at different concentrations in a sugar- or alcohol-based carrier.

Vanilla powder is made from whole dried and ground pods. Each form has advantages depending on the application—pastry, beverages or quick preparations.

Once harvested at maturity and properly stabilised, vanilla pods can be stored in a dry place, away from light and at room temperature.

After opening the bag, if vacuum resealing is not possible, store the pods in an airtight glass jar away from light. This preserves their quality and prevents them from drying out.

When properly stabilised and stored, a vanilla pod can keep for several years. Over time it may lose some moisture, but it retains its aromas if stored correctly.

Traditionally, for vanilla used in pastry-making, simply split the pod lengthways and scrape out the seeds with a knife. The seeds and pod can be infused in milk, cream or other preparations to extract all their aromas.

There are other ways to use vanilla pods depending on your application, so please contact us for advice.

Yes. A used pod can be rinsed, dried and then ground to flavour future preparations. It can also be placed in sugar to make homemade vanilla sugar.

Natural vanilla has great aromatic complexity, with hundreds of compounds. Artificial vanillin, often synthesised, reproduces only vanilla’s main aromatic molecule—vanillin—resulting in a simpler, less complex taste.

Authentic Products Madagascar vanilla pods are prepared locally by our teams. They then undergo rigorous checks, analyses and demanding selection by our teams based in Bordeaux, France. This gives us complete control of the process and full traceability, from production in Madagascar to delivery to our customers.

For other origins, we work with committed producers who strictly comply with hygiene standards and regulatory requirements, carefully selecting their highest-quality pods.

Split vanilla is harvested at a late stage of maturity and naturally splits at the tip while still on the vine. Its notes are generally rounder and more candied than those of unsplit vanilla.

There are three main categories:

Gourmet vanilla, generally with a moisture content of 28 to 38%, supple and mainly intended for food professionals,

red vanilla, also known as extraction-grade vanilla, with a moisture content of approximately 20 to 28%

cuts, generally intended for the US market: lower-grade vanilla, often broken or very short.

Vanilla powder is made by grinding whole pods, which are often dried beforehand.

This should not be confused with spent vanilla powder, made in the same way but from pods that have already been used and are therefore described as ‘spent’. It serves only as a visual marker because all aromatic compounds have been extracted.

Vanilla powder can be used in all types of preparations. However, we do not recommend using it directly in cream, as the product may take on a greyish colour.

Vanilla extract is obtained by macerating pods in an alcoholic mixture. This extract, also known as oleoresin, is then generally diluted at different concentrations in a sugar- or alcohol-based carrier.

Vanilla powder is made from whole dried and ground pods. Each form has advantages depending on the application—pastry, beverages or quick preparations.

Once harvested at maturity and properly stabilised, vanilla pods can be stored in a dry place, away from light and at room temperature.

After opening the bag, if vacuum resealing is not possible, store the pods in an airtight glass jar away from light. This preserves their quality and prevents them from drying out.

When properly stabilised and stored, a vanilla pod can keep for several years. Over time it may lose some moisture, but it retains its aromas if stored correctly.

Yes. A used pod can be rinsed, dried and then ground to flavour future preparations. It can also be placed in sugar to make homemade vanilla sugar.

Natural vanilla has great aromatic complexity, with hundreds of compounds. Artificial vanillin, often synthesised, reproduces only vanilla’s main aromatic molecule—vanillin—resulting in a simpler, less complex taste.

Split vanilla is harvested at a late stage of maturity and naturally splits at the tip while still on the vine. Its notes are generally rounder and more candied than those of unsplit vanilla.

There are three main categories:

Gourmet vanilla, generally with a moisture content of 28 to 38%, supple and mainly intended for food professionals,

red vanilla, also known as extraction-grade vanilla, with a moisture content of approximately 20 to 28%

cuts, generally intended for the US market: lower-grade vanilla, often broken or very short.

Vanilla powder is made by grinding whole pods, which are often dried beforehand.

This should not be confused with spent vanilla powder, made in the same way but from pods that have already been used and are therefore described as ‘spent’. It serves only as a visual marker because all aromatic compounds have been extracted.

Vanilla powder can be used in all types of preparations. However, we do not recommend using it directly in cream, as the product may take on a greyish colour.
